This is a dish I’ve developed over a long while - for when I need a meal on the table in 30 minutes with a decent whack of plant protein, a range of plant diversity and plenty of fibre for the gut. Several items as you’ll see are pantry staples or from the freezer.

My daughter says the soft silken tofu surrounded by crispy coating gives her a “fish in batter” sensation fix, without resorting to a chip shop! Have a go, see what you think and let me know?
